To kick off Deering Seafood Festival, Bill Hansen Catering has partnered with Deering Estate to present the 2nd Annual Chef’s Table On The Bay on April 8th. The fine-dining event will take place from 6:30 PM to 10:30 PM. Guests will have the opportunity to enjoy live music, cocktail hour, and a 4-course dinner under the stars at the Deering Estate courtyard.
Bill Hansen Catering’s Corporate Executive Chef, Dewey LoSasso, will be preparing and demonstrating a 4-course meal. LoSasso has cooked for many A-list celebrities such as Dwayne “The Rock’ Johnson, Gloria Estefan and Al Pacino, and worked as Donatella Versace’s personal chef. He was a judge on Food Network’s Chopped and Esquire Magazine named his “Coffee, Steak, and Eggs Dish” one of the top dishes in the country.
The Chef’s Table Menu Includes:
Biscuits, Sullivan Street Bread, Smoked Redland Chili Honey
Chilled, Grilled Sazerac Prawns with Local Greens, Candied Pecans, Rye – Cheddar Fritter, Lychee Tangerine Vinaigrette, Pomelo Brulee
Lobster Grillades, Florida Clams and Grits, Velvet Corn – Porcini Sauce
Blackened Black Grouper served over Gumbo, Crispy Homestead Bacon Leaf, Crab Hush Puppies, Rosemary roasted Purple Cauliflower
King Cake Bread Pudding, Praline Crumble, Hurricane Zabaglione
Golden Rule Seafood will be providing a raw bar and charcuterie during the cocktail hour. Michael Thaler of Breakthru Beverage will be providing wine pairings and Veza Sur will be providing craft beer for the evening, Attendees will get a special “Hurricane” cocktail at the end of the night.
